Käthe's favorite recipe: Cinnamon stars

Cinnamon stars are the fragrant messengers of the Christmas season - an indispensable classic that brings the sweet magic of Advent and festivity into every home. The irresistible scent of cinnamon and roasted almonds fills the kitchen, while the delicate sugar icing on the stars glistens and literally invites you to snack on them. These little masterpieces made from almonds, cinnamon and love are not only visually eye-catching, but also a tasty treat. Whether as a gift or on your own cookie plate - with this recipe, you are not just baking cookies, you are conjuring up a piece of Christmas magic.
Ingredients
3 egg whites
250 g powdered sugar
300 g ground almonds
1-2 tsp cinnamon
1 pinch of salt or 1 squeeze of lemon juice
Powdered sugar for rolling out
Baking paper
Cookie cutter (star)
Method
Beat the egg whites with the salt or lemon juice until stiff. Then continue beating and add the powdered sugar. Set aside three tablespoons of the mixture (approx. 1/3) in a cool place.
Stir the almonds and cinnamon into the remaining egg white mixture until a dough forms.
Dust the work surface with powdered sugar. Roll out the dough to a thickness of approx. 1 cm and cut out stars. Place them on a baking tray lined with baking paper. Knead the leftover dough together and repeat the process.
For the icing, use a spoon to spread the egg white mixture set aside over the stars right up to the edge.
Bake at 150°C (top/bottom heat) for approx. 15 minutes. Leave to cool.
